Scandinavian Burritos

Recipe here. I had actually never made lefse, despite being pretty Norwegian. Turns out it was kind of a pain in the butt. I don’t recommend making it if you don’t have a potato ricer–yummy though!

Roasted Leeks:
Chopped and washed 3 big ole leeks and roasted with olive oil, salt, and pepper for 40ish minutes on 425 F, stirring a couple times.

White Gravy:
Made a roux and then added chicken broth, sage, half & half, salt, and lots of pepper

Swedish Meatballs:
Adapted from my grandma’s recipe
1 1/2 lbs ground turkey
3/4 C old fashioned oats (ground up coarsely in the food processor)
1 1/2 tsp salt
1/2 C onion pureed with a splash of milk
1 beaten egg
1/8 tsp nutmeg
1/2 tsp all spice

Form into balls, bake @ 300 F for 45-60 min, turning once halfway through. (I browned these in a pan first and reduced the baking time)

Jarred, store-bought.

Mashed Potatoes:
Yukon gold potatoes mashed up with some plain greek yogurt, butter, salt, and pepper.
