Cream Cheese Pancakes

I’m not sure if I have mentioned this before but I am currently training for Grandma’s Marathon up in Duluth which is coming up next weekend! As part of my training meal plan, I have been going low carb for the past few days (something about depleting cell Glycogen stores….Biology!) before diving into carb loading.

For my low carb breakfast, I made these excellent Low Carb Cream Cheese Pancakes! At only two ingredients, it couldn’t be easier to make! I put a dollop of unsweetened whipped cream on top, filled them with plain Greek yogurt, sprinkled with hemp hearts, drizzled some almond butter, and added a couple of raspberries and strawberries for color (plus, giving up ALL carbs is nearly impossible!)
