Mac and Cheese, Collard Greens, and Deep Fried Tofu
This was EXTREMELY good! I was a little curious about how the whole “Freeze, Defrost, Freeze, Defrost” of the tofu was going to work out but it apparently does something amazing because once the tofu was deep fried it was really reminiscent of Popcorn Chicken (just a little bit lighter). And as a bonus, I got to bust out the Serious Eats 3 ingredient Mac and Cheese which is always a real treat.

And for the Collard Greens, I just blanched them in Chicken Broth (and they turned out great!)
